Baked Beans in Clay Pot

Creamy white beans baked in a paprika-spiced tomato sauce in a traditional clay pot until bubbly and rich.

Ingredients

  • 400g dried white beans
  • 1 onion, diced
  • 2 tbsp paprika
  • 3 tbsp sunflower oil
  • 2 tbsp tomato paste
  • 1 dried chili
  • 2 bay leaves
  • Salt
  • Fresh mint

Instructions

  1. 1 Soak beans overnight. Drain and boil in fresh water 45 min until just tender.
  2. 2 Sauté onion in oil, add paprika and tomato paste.
  3. 3 Combine beans with onion mixture in a clay pot.
  4. 4 Add enough bean cooking liquid to just cover.
  5. 5 Add bay leaves and chili. Bake at 180°C for 1 hour until thick and bubbly.
  6. 6 Garnish with fresh mint.
