Instructions

Soak beans overnight. Drain and boil in fresh water 45 min until just tender.

Sauté onion in oil, add paprika and tomato paste.

Combine beans with onion mixture in a clay pot.

Add enough bean cooking liquid to just cover.

Add bay leaves and chili. Bake at 180°C for 1 hour until thick and bubbly.

This dish predates tavce gravce in name but shares the same roots — the ancient Macedonian tradition of baking beans in clay pots. The version with just beans (no meat) reflects the strong Orthodox fasting traditions that shaped Macedonian cooking.
