Crispy, spiral-shaped phyllo pastry filled with creamy white cheese, baked until shatteringly golden and flaky.

Ingredients

  • 500g phyllo dough or homemade yufka
  • 400g sirene cheese, crumbled
  • 3 eggs
  • 100ml sunflower oil
  • 100ml sparkling water
  • Pinch of salt

Instructions

  1. 1 Mix crumbled cheese with eggs and a pinch of salt.
  2. 2 Lay out phyllo sheets, brush with oil.
  3. 3 Spread cheese mixture along the edge and roll into a log.
  4. 4 Coil the log into a spiral in an oiled round pan.
  5. 5 Brush top with oil and sparkling water for extra crispness.
  6. 6 Bake at 200°C for 30-35 min until deep golden and flaky.
