A smooth, white, moulded rice dough with a soft, stretchy texture, the quintessential accompaniment to northern Nigerian soups.

Ingredients

  • 2 cups short-grain rice or broken rice
  • 4 cups water
  • Pinch of salt

Instructions

  1. 1 Wash rice thoroughly and boil in water until very soft and overcooked, about 25 minutes.
  2. 2 Mash the rice in the pot with a wooden spoon or potato masher until smooth and sticky.
  3. 3 Continue stirring vigorously over low heat until the mixture forms a smooth, stretchy dough.
  4. 4 Wet a mould or small bowl, scoop the tuwo into it, and press to shape.
  5. 5 Unmould onto a plate and serve warm alongside soup.
