A creamy, nourishing drink made from ground rice and groundnuts, subtly spiced and served chilled — northern Nigeria's beloved refreshment.

Ingredients

  • 1 cup raw groundnuts (peanuts)
  • 1/2 cup rice, soaked
  • 1 small piece fresh ginger
  • 1 tsp vanilla extract
  • 3 cups water
  • Sugar or honey to taste
  • Pinch of salt

Instructions

  1. 1 Soak rice for at least 2 hours. Drain.
  2. 2 Blend groundnuts, soaked rice, ginger, and 2 cups water until very smooth.
  3. 3 Strain through a fine sieve or cheesecloth, pressing to extract all liquid.
  4. 4 Add remaining water, vanilla, sugar, and salt. Stir well.
  5. 5 Chill thoroughly in the refrigerator.
  6. 6 Serve cold. Shake or stir before pouring as it settles naturally.
