Soak rice for at least 2 hours. Drain.

Blend groundnuts, soaked rice, ginger, and 2 cups water until very smooth.

Strain through a fine sieve or cheesecloth, pressing to extract all liquid.

Add remaining water, vanilla, sugar, and salt. Stir well.

Chill thoroughly in the refrigerator.

Serve cold. Shake or stir before pouring as it settles naturally.
