Gizzard and Plantain

A sweet and savory medley of spiced chicken gizzards and caramelized fried plantain cubes tossed in a vibrant pepper sauce.

Ingredients

  • 500g chicken gizzards
  • 3 ripe plantains, cubed
  • 2 red bell peppers, diced
  • 2 scotch bonnet peppers, minced
  • 1 large onion, diced
  • 3 tbsp vegetable oil
  • 2 tbsp tomato paste
  • 1 tsp curry powder
  • 1 bouillon cube
  • Salt to taste

Instructions

  1. 1 Boil gizzards with salt and half the onion until very tender, about 30 minutes. Drain and cut into bite-sized pieces.
  2. 2 Fry plantain cubes in oil until golden and caramelized. Drain and set aside.
  3. 3 In the same pan, sauté remaining onion, add tomato paste, and fry 2 minutes.
  4. 4 Add diced bell peppers, scotch bonnet, curry powder, and bouillon. Cook 5 minutes.
  5. 5 Add gizzards and toss to coat in the sauce. Cook 3 minutes.
  6. 6 Fold in fried plantain cubes gently. Serve immediately while hot.
