Instructions

    Boil gizzards with salt and half the onion until very tender, about 30 minutes. Drain and cut into bite-sized pieces.

    Fry plantain cubes in oil until golden and caramelized. Drain and set aside.

    In the same pan, sauté remaining onion, add tomato paste, and fry 2 minutes.
