Fried Plantain Chips with Cheese

Crispy fried green plantain chips served with crumbled salty white cheese and a drizzle of sour cream, a quintessential Nicaraguan snack.

Ingredients

  • 4 green plantains, peeled
  • Vegetable oil for frying
  • 200g queso seco (dry white cheese), crumbled
  • 1/2 cup sour cream
  • Salt to taste

Instructions

  1. 1 Slice plantains very thinly on a diagonal using a mandoline or sharp knife for even chips.
  2. 2 Heat oil to 175C. Fry plantain slices in batches until golden and crispy, about 3 minutes per batch.
  3. 3 Drain on paper towels and season immediately with salt while still hot.
  4. 4 Arrange chips on a platter. Crumble queso seco generously over the top.
  5. 5 Drizzle with sour cream and serve immediately while chips are still warm and crunchy.
