Instructions

Slice plantains very thinly on a diagonal using a mandoline or sharp knife for even chips.

Heat oil to 175C. Fry plantain slices in batches until golden and crispy, about 3 minutes per batch.

Drain on paper towels and season immediately with salt while still hot.

Arrange chips on a platter. Crumble queso seco generously over the top.

Drizzle with sour cream and serve immediately while chips are still warm and crunchy.
