Ingredients

  • 4 large soft corn tortillas
  • 400g quesillo cheese (or mozzarella), cut in strips
  • 1 large white onion, thinly sliced
  • 1/2 cup white vinegar
  • 1 cup sour cream
  • Salt
  • 1 tsp sugar

Instructions

  1. 1 Pickle the onions by tossing thin slices with vinegar, salt, and sugar. Let sit at least 15 minutes until softened.
  2. 2 Warm tortillas on a dry skillet until pliable, about 30 seconds per side.
  3. 3 Place a strip of quesillo cheese in the center of each warm tortilla.
  4. 4 Top with pickled onions and a generous drizzle of sour cream.
  5. 5 Roll the tortilla around the cheese and toppings. Traditionally served in a small plastic bag to catch drips.
