Yam Baked in Banana Leaves

Grated yam mixed with coconut milk, wrapped in banana leaves and baked in an earth oven.

Ingredients

  • 1kg yam, peeled and grated
  • 2 cups coconut milk
  • 1/2 tsp salt
  • Banana leaves
  • 1 onion, sliced
  • 1 cup island cabbage
  • Coconut cream for topping
  • 1 lime, juiced

Instructions

  1. 1 Grate yam finely.
  2. 2 Mix with coconut milk and salt.
  3. 3 Line banana leaves and spread yam mixture.
  4. 4 Add island cabbage and onion layer.
  5. 5 Wrap in banana leaves securely.
  6. 6 Bake in earth oven 2 hours or regular oven at 180C.
