Ingredients

  • 4 whole reef fish, cleaned
  • Salt for rubbing
  • 2 limes, juiced
  • Green wood for smoking
  • 1 tsp pepper
  • Banana leaves
  • 1 onion, sliced
  • Coconut cream for serving

Instructions

  1. 1 Clean and score fish.
  2. 2 Rub with salt, lime, and pepper.
  3. 3 Build a smoking rack over green wood fire.
  4. 4 Place fish on rack.
  5. 5 Smoke slowly for 2-3 hours turning occasionally.
  6. 6 Serve with coconut cream and onion.
