Ingredients

  • 1 ripe breadfruit, roasted
  • 1 cup thick coconut cream
  • 1/4 tsp salt
  • Banana leaves for serving
  • 1 tbsp coconut oil
  • 1/4 cup grated coconut
  • 1 tsp sugar
  • Lime juice

Instructions

  1. 1 Roast whole breadfruit over fire until charred.
  2. 2 Peel and remove core.
  3. 3 Pound hot breadfruit with pestle until smooth.
  4. 4 Gradually work in coconut cream.
  5. 5 Continue pounding until dense and elastic.
  6. 6 Shape into a mound and serve on banana leaf.
