Grated cassava baked with coconut milk in banana leaves over hot stones. A traditional earth oven dish.

Ingredients

  • 1kg cassava, peeled and grated
  • 2 cups coconut milk
  • 1/2 tsp salt
  • Banana leaves
  • 1 onion, sliced
  • 1 cup island cabbage
  • 2 tbsp coconut cream
  • 1 tbsp coconut oil

Instructions

  1. 1 Grate cassava finely.
  2. 2 Mix with coconut milk and salt.
  3. 3 Line banana leaves on a flat surface.
  4. 4 Spread cassava mixture on leaves.
  5. 5 Layer with island cabbage and onion.
  6. 6 Wrap in banana leaves, bake in earth oven 2 hours.
