Sweet potatoes roasted in hot coals until charred outside and soft inside. A simple, sweet staple.

Ingredients

  • 4 medium sweet potatoes
  • 1 tbsp coconut oil
  • Salt to taste
  • 1 tbsp butter
  • Lime juice
  • 1/4 tsp cinnamon
  • Coconut cream
  • Pinch of pepper

Instructions

  1. 1 Wash sweet potatoes and poke with a fork.
  2. 2 Rub with coconut oil and salt.
  3. 3 Place in hot coals or oven at 200C.
  4. 4 Roast 40 minutes until soft inside.
  5. 5 Split open and add butter and cinnamon.
  6. 6 Drizzle with coconut cream and serve.
