Island cabbage leaves simmered in coconut milk with onion and garlic. A nourishing green soup.

Ingredients

  • 400g island cabbage leaves
  • 2 cups coconut milk
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup water
  • 1 tbsp oil
  • Salt to taste
  • 1 lime, juiced

Instructions

  1. 1 Wash and chop island cabbage.
  2. 2 Saute onion and garlic in oil.
  3. 3 Add cabbage and stir 2 minutes.
  4. 4 Pour in coconut milk and water.
  5. 5 Simmer 20 minutes until tender.
  6. 6 Season with salt and lime juice.
