Whole Fish Grilled Over Coals

Fresh reef fish rubbed with lime and salt, grilled whole over coconut husk coals.

Ingredients

  • 1 whole reef fish (600g)
  • 2 limes, juiced
  • Salt and pepper
  • 1 tbsp coconut oil
  • Banana leaf
  • 2 cloves garlic, crushed
  • 1 green onion, sliced
  • 1 hot pepper, sliced

Instructions

  1. 1 Score fish and rub with lime, garlic, salt.
  2. 2 Let marinate 10 minutes.
  3. 3 Oil banana leaf and place fish on it.
  4. 4 Grill over hot coals 8 minutes per side.
  5. 5 Garnish with green onion and hot pepper.
  6. 6 Serve on banana leaf with lime.
