Chef's Notes
The Story Behind Roasted Breadfruit
Breadfruit roasting is perhaps the oldest cooking method on Nauru, requiring nothing but fire and the fruit itself. Ancient Nauruans would roast breadfruit in earth ovens or directly over open flames.
The charred exterior gives way to a fluffy, potato-like interior that pairs perfectly with coconut cream.
Breadfruit remains vital to food security on this small island nation.
