Day-old rice stir-fried with soy sauce, vegetables, and egg. A quick, satisfying everyday meal.

Ingredients

  • 4 cups cooked rice (day-old)
  • 2 tbsp soy sauce
  • 2 eggs, beaten
  • 1 onion, diced
  • 1 carrot, diced
  • 2 green onions, sliced
  • 2 tbsp vegetable oil
  • Salt and pepper

Instructions

  1. 1 Heat oil in wok or large skillet over high heat.
  2. 2 Scramble eggs quickly, set aside.
  3. 3 Stir-fry onion and carrot 2 minutes.
  4. 4 Add cold rice and toss to heat through.
  5. 5 Add soy sauce and toss well.
  6. 6 Return eggs, add green onions, and serve.
