Chunks of fish and breadfruit simmered in coconut milk with garlic and onion. Hearty one-pot meal.

Ingredients

  • 400g white fish, cubed
  • 1/2 breadfruit, peeled and cubed
  • 2 cups coconut milk
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp oil
  • Salt and pepper
  • 1 lime, juiced

Instructions

  1. 1 Saute onion and garlic in oil until fragrant.
  2. 2 Add breadfruit cubes and coconut milk.
  3. 3 Simmer 15 minutes until breadfruit softens.
  4. 4 Add fish pieces.
  5. 5 Cook 10 more minutes until fish is flaky.
  6. 6 Season with salt, pepper, and lime juice.
