Fluffy white rice cooked in coconut milk with a pinch of salt. The everyday Nauruan accompaniment.

Ingredients

  • 2 cups long-grain rice
  • 1 cup coconut milk
  • 1 cup water
  • 1/2 tsp salt
  • 1 tbsp butter
  • 1 pandan leaf
  • 1/4 cup grated coconut
  • 1 tsp sugar

Instructions

  1. 1 Rinse rice until water runs clear.
  2. 2 Combine rice, coconut milk, water, salt, and sugar.
  3. 3 Add pandan leaf and bring to boil.
  4. 4 Reduce heat to lowest setting and cover.
  5. 5 Cook 18 minutes without lifting lid.
  6. 6 Remove pandan leaf, stir in butter, fluff with fork.
