Simple bread enriched with coconut milk and sugar, baked until golden. A sweet island staple.

Ingredients

  • 2 cups flour
  • 1/2 cup coconut milk
  • 3 tbsp sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 2 tbsp butter, melted
  • 1/4 cup grated coconut
  • 1/4 cup water

Instructions

  1. 1 Mix flour, sugar, baking powder, and salt.
  2. 2 Add coconut milk, water, and melted butter.
  3. 3 Knead into a soft dough.
  4. 4 Fold in grated coconut.
  5. 5 Shape into a round loaf on baking sheet.
  6. 6 Bake at 180C for 25 minutes until golden.
