Wild Spinach Relish

A simple, nourishing relish of wild spinach greens cooked with tomatoes and onion, a staple accompaniment that brings vitamins and flavour to every Owambo meal.

Ingredients

  • 500g wild spinach or Swiss chard, washed and chopped
  • 2 tomatoes, chopped
  • 1 onion, diced
  • 1 tbsp vegetable oil
  • Salt to taste

Instructions

  1. 1 Heat oil in a pot, sauté onion until translucent.
  2. 2 Add tomatoes and cook for 3 minutes.
  3. 3 Add chopped greens, cover and cook for 10 minutes until wilted and tender.
  4. 4 Season with salt and serve as a side dish.
