1 sheep head, cleaned and singed

2 tbsp coarse salt

1 tbsp black pepper

1 tsp garlic powder

Water to cover

1 onion, halved

2 bay leaves
Instructions

Clean the sheep head thoroughly, remove any remaining hair by singeing.

Place in a large pot with onion, bay leaves, and salt. Cover with water.

Bring to a boil, then reduce heat and simmer for 2 hours until meat is tender.

Remove from liquid and season with salt, pepper, and garlic powder.

Grill over hot coals for 15-20 minutes, turning to char all sides.

Serve whole or split open, with the cheek and tongue as the prime cuts.
