Namibian Lamb Curry

Cape Malay Style Lamb Curry

A fragrant, mildly spiced lamb curry with apricots and almonds, reflecting the Cape Malay influence that traveled north to Namibia.

Ingredients

  • 1kg lamb shoulder, cubed
  • 2 onions, diced
  • 3 cloves garlic, minced
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 cinnamon stick
  • 1/2 cup dried apricots
  • 1/4 cup flaked almonds
  • 2 tomatoes, chopped
  • 1 cup lamb stock
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh coriander for garnish

Instructions

  1. 1 Heat oil and brown lamb cubes in batches. Set aside.
  2. 2 Sauté onions and garlic until golden. Add curry powder, turmeric, cumin, and cinnamon. Fry 1 minute.
  3. 3 Add tomatoes and cook until saucy.
  4. 4 Return lamb, add stock and apricots. Bring to a boil.
  5. 5 Reduce heat, cover, and simmer for 1 hour until lamb is tender.
  6. 6 Toast almonds and stir into the curry. Garnish with coriander and serve.
