A moist, dense, slightly sweet bread made from fresh corn kernels steamed in corn husks, yielding a cake-like texture with pure corn flavour.

Ingredients

  • 6 ears fresh corn, kernels removed
  • 2 eggs, beaten
  • 2 tbsp butter, melted
  • 2 tbsp sugar
  • 1 tsp salt
  • Fresh corn husks for wrapping

Instructions

  1. 1 Blend corn kernels to a coarse paste — not too smooth, some texture should remain.
  2. 2 Mix in beaten eggs, melted butter, sugar, and salt.
  3. 3 Line a loaf tin or shape packets with corn husks and pour in the batter.
  4. 4 Cover tightly with more husks and foil.
  5. 5 Steam over boiling water for 1 hour until firm and set.
  6. 6 Cool slightly, unwrap, and slice to serve.
