A fiery, chunky vegetable relish of baked beans, tomatoes, peppers, and carrots spiced with curry and chilli, served as a vibrant accompaniment to braai and pap.
Ingredients
1 can baked beans
3 tomatoes, chopped
2 carrots, grated
1 green pepper, diced
1 red pepper, diced
1 onion, diced
2 chillies, minced
1 tbsp curry powder
2 tbsp vegetable oil
Salt to taste
Instructions
1Heat oil and sauté onion until soft.
2Add carrots and peppers, cook for 5 minutes.
3Add chillies, curry powder, and tomatoes. Cook 5 minutes.
4Stir in baked beans and simmer on low for 10 minutes.
5Season with salt and serve hot or at room temperature.
