A fiery, chunky vegetable relish of baked beans, tomatoes, peppers, and carrots spiced with curry and chilli, served as a vibrant accompaniment to braai and pap.

Ingredients

  • 1 can baked beans
  • 3 tomatoes, chopped
  • 2 carrots, grated
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 onion, diced
  • 2 chillies, minced
  • 1 tbsp curry powder
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. 1 Heat oil and sauté onion until soft.
  2. 2 Add carrots and peppers, cook for 5 minutes.
  3. 3 Add chillies, curry powder, and tomatoes. Cook 5 minutes.
  4. 4 Stir in baked beans and simmer on low for 10 minutes.
  5. 5 Season with salt and serve hot or at room temperature.
