A light yet flavorful soup of fresh fish simmered with vegetables, coconut milk, and a hint of piri-piri, served as a starter or light meal.

Ingredients

  • 400g white fish fillets, cubed
  • 2 potatoes, diced
  • 1 carrot, sliced
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 200ml coconut milk
  • 1 liter fish or vegetable stock
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Piri-piri to taste
  • Fresh cilantro
  • Salt

Instructions

  1. 1 Heat olive oil in a large pot, sauté onion and garlic for four minutes until softened but not browned.
  2. 2 Add potatoes, carrot, and tomatoes, cook for three minutes, stirring to coat everything with oil.
  3. 3 Pour in stock, bring to a boil, then reduce heat and simmer for fifteen minutes until potatoes are tender.
  4. 4 Add fish cubes and coconut milk, cook gently for five minutes until fish is opaque and flakes easily.
  5. 5 Season with salt and piri-piri to taste, being careful not to stir too vigorously or the fish will break apart.
  6. 6 Ladle into bowls, garnish with fresh cilantro, and serve with crusty bread on the side.
