Fresh leafy greens braised in a thick peanut sauce with tomatoes and garlic, a nutritious everyday dish from central Mozambique.

Ingredients

  • 1 large bunch collard greens or kale, chopped
  • 100g roasted peanuts, ground
  • 2 tomatoes, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp vegetable oil
  • Salt to taste
  • Chili flakes

Instructions

  1. 1 Heat oil in a large pot, sauté onion and garlic for five minutes until softened and fragrant.
  2. 2 Add chopped tomatoes and cook for five minutes until they form a thick sauce, stirring occasionally.
  3. 3 Add chopped greens in handfuls, stirring each batch until wilted before adding the next portion.
  4. 4 Sprinkle ground peanuts over the greens, add a splash of water, and stir everything together thoroughly.
  5. 5 Cover and cook on low heat for ten minutes until greens are tender and the peanut sauce coats everything.
  6. 6 Season with salt and chili flakes, and serve as a side dish with xima or rice for a complete meal.
