Ingredients

  • 500g all-purpose flour
  • 200g whole almonds
  • 100g sesame seeds
  • 150g unsalted butter, melted
  • 150g honey
  • 100g powdered sugar
  • 2 tsp ground cinnamon
  • 1 tsp ground anise seed
  • 1/2 tsp ground nutmeg
  • 3 tbsp olive oil
  • Pinch of salt

Instructions

  1. 1 Toast flour in a large dry skillet over medium heat, stirring constantly for fifteen minutes until golden and nutty.
  2. 2 Toast almonds separately until fragrant, then grind coarsely. Toast sesame seeds until golden, about five minutes.
  3. 3 Combine toasted flour, ground almonds, and sesame seeds in a large bowl. Add cinnamon, anise, nutmeg, and salt.
  4. 4 Pour melted butter, olive oil, and warm honey over the dry mixture. Mix thoroughly until everything is well combined.
  5. 5 Add powdered sugar gradually, mixing until the texture is crumbly but holds together when pressed into a mound shape.
  6. 6 Shape into a dome on a serving plate, decorate with whole almonds and a generous dusting of cinnamon on top.
