Grilled Beef Kefta Skewers

Juicy, well-spiced ground beef skewers grilled over charcoal until charred and smoky, served with cumin salt and fresh bread.

Ingredients

  • 500g ground beef
  • 1 onion, very finely grated
  • 2 tbsp fresh parsley, minced
  • 2 tbsp fresh cilantro, minced
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Cumin salt for serving

Instructions

  1. 1 Combine ground beef with grated onion, herbs, and all spices in a bowl. Knead mixture for five minutes until smooth.
  2. 2 Refrigerate the mixture for thirty minutes to firm up, making it much easier to mold onto the skewers securely.
  3. 3 Divide mixture into eight portions. Mold each portion around a flat metal skewer in a long sausage shape firmly.
  4. 4 Grill over hot charcoal or under a broiler for four minutes per side, turning once until charred and cooked through.
  5. 5 Remove from skewers onto a warm platter. Sprinkle immediately with cumin salt while the kefta are still sizzling.
  6. 6 Serve with warm bread, sliced tomatoes, raw onion rings, and harissa. These are best eaten immediately off the grill.
