500g dried white beans, soaked overnight

2 onions, diced

3 tbsp sweet paprika

2 tbsp olive oil

2 dried chili peppers

2 bay leaves

Salt, pepper

Fresh parsley
Instructions

Drain soaked beans. Boil in fresh water 30 min until par-cooked. Drain, reserving liquid.

Sauté onions in olive oil until golden. Add paprika, stir 30 seconds.

Combine beans, sautéed onions, chili peppers, and bay leaves in a clay pot.

Add enough reserved bean water to just cover the beans.

Bake uncovered at 180C (350F) for 2 hours, adding water if needed to prevent drying.

Beans should be creamy and sauce thick. Garnish with parsley and serve from the pot.
