Baked Beans in Clay Pot

Creamy white beans slow-baked in a clay pot with sweet paprika, onions, and tomato until thick, rich, and deeply flavored.

Ingredients

  • 500g dried white beans, soaked overnight
  • 2 onions, diced
  • 3 tbsp sweet paprika
  • 2 tbsp olive oil
  • 2 dried chili peppers
  • 2 bay leaves
  • Salt, pepper
  • Fresh parsley

Instructions

  1. 1 Drain soaked beans. Boil in fresh water 30 min until par-cooked. Drain, reserving liquid.
  2. 2 Sauté onions in olive oil until golden. Add paprika, stir 30 seconds.
  3. 3 Combine beans, sautéed onions, chili peppers, and bay leaves in a clay pot.
  4. 4 Add enough reserved bean water to just cover the beans.
  5. 5 Bake uncovered at 180C (350F) for 2 hours, adding water if needed to prevent drying.
  6. 6 Beans should be creamy and sauce thick. Garnish with parsley and serve from the pot.
