Noodle Soup with Mutton

A comforting mutton broth loaded with hand-cut noodles, tender meat, and simple vegetables. The everyday soup of Mongolian families.

Ingredients

  • 400g mutton, cubed
  • 2 cups flour
  • 3/4 cup water
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1.5 litres water
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves

Instructions

  1. 1 Boil mutton in 1.5 litres water with bay leaves for 30 minutes, skimming foam. Remove meat, reserve broth.
  2. 2 Make dough from flour, water, and salt. Knead, rest 10 minutes, roll thin, cut into flat noodle strips.
  3. 3 Add onion, carrots, and potatoes to broth. Simmer 10 minutes.
  4. 4 Add noodles and return mutton to pot. Cook 8 minutes until noodles are tender.
  5. 5 Season with salt and pepper. Discard bay leaves.
  6. 6 Ladle into deep bowls. Serve immediately while steaming hot.
