Fruit Compote Drink

A sweet, refreshing drink made by simmering seasonal fruits in sugar syrup, served chilled with the cooked fruit, a staple on every Moldovan table.

Ingredients

  • 500g mixed fruits (cherries, plums, apples, pears)
  • 150g sugar
  • 2 liters water
  • 1 cinnamon stick
  • 2 whole cloves
  • Juice of half a lemon

Instructions

  1. 1 Wash and prepare the fruit. Pit cherries and plums, core and slice apples and pears into wedges.
  2. 2 Bring water to a boil in a large pot. Add sugar and stir until completely dissolved.
  3. 3 Add fruit, cinnamon stick, and cloves. Bring back to a gentle simmer.
  4. 4 Cook for ten to fifteen minutes until the fruit is tender but still holds its shape.
  5. 5 Add lemon juice, stir, and remove from heat. Let cool to room temperature.
  6. 6 Chill thoroughly before serving. Pour into glasses with some of the cooked fruit in each glass.
