Ripe pandanus fruit pounded into a sweet paste and dried. A traditional preserved sweet.

Ingredients

  • 1 ripe pandanus fruit
  • 1/4 cup sugar
  • 1/4 cup coconut cream
  • Pinch of salt
  • Banana leaves for wrapping
  • 1/4 cup water
  • 1 tsp vanilla
  • 1/4 cup grated coconut

Instructions

  1. 1 Separate pandanus keys from the fruit head.
  2. 2 Extract pulp by pounding and scraping keys.
  3. 3 Mix pulp with sugar, coconut cream, salt, and vanilla.
  4. 4 Cook mixture on low heat, stirring until thick.
  5. 5 Spread on banana leaves and dry in sun or low oven.
  6. 6 Roll up and cut into portions.
