Ingredients

  • 500g chicken breast, grilled and chopped
  • 4 lemons, juiced
  • 1/2 cup grated fresh coconut
  • 1 small onion, finely diced
  • 2 green onions, sliced
  • 1 hot pepper, minced
  • Salt to taste
  • Corn tortillas for serving

Instructions

  1. 1 Grill chicken until cooked through, then chop finely.
  2. 2 Toss chopped chicken with lemon juice immediately.
  3. 3 Add grated coconut, onion, green onions, and hot pepper.
  4. 4 Mix well and season with salt.
  5. 5 Refrigerate 15 minutes to let flavors meld.
