Whole reef fish marinated in soy and lime then grilled over coals. Simple and smoky island fare.

Ingredients

  • 1 whole reef fish (600g), cleaned
  • 2 tbsp soy sauce
  • 2 limes, juiced
  • 2 cloves garlic, crushed
  • 1 tbsp vegetable oil
  • Salt and pepper
  • Banana leaf for wrapping
  • 1 green onion, sliced

Instructions

  1. 1 Score fish on both sides with diagonal cuts.
  2. 2 Mix soy sauce, lime juice, garlic, and oil.
  3. 3 Marinate fish 15 minutes.
  4. 4 Wrap loosely in banana leaf.
  5. 5 Grill over medium coals 8 minutes per side.
  6. 6 Unwrap, garnish with green onion, and serve.
