Chef's Notes
The Story Behind Coconut Rice
Rice was introduced to Micronesia during the Japanese colonial period and quickly became a dietary staple. Cooking it in coconut milk was a natural adaptation using the islands' most abundant resource.
This simple preparation elevates plain rice into something fragrant and satisfying.
Coconut rice accompanies virtually every meal across the Federated States of Micronesia.
