Coconut Milk Taro

Taro Simmered in Coconut Milk

Chunks of taro root slow-simmered in sweetened coconut milk until creamy and tender.

Ingredients

  • 500g taro root, peeled and cubed
  • 2 cups coconut milk
  • 3 tbsp sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1 cup water
  • 1 pandan leaf
  • 1 tbsp butter

Instructions

  1. 1 Peel taro and cut into 3cm cubes.
  2. 2 Boil taro in water until just tender, about 15 minutes.
  3. 3 Drain and add coconut milk, sugar, salt, and pandan leaf.
  4. 4 Simmer on low heat for 15 minutes.
  5. 5 Stir in vanilla and butter.
  6. 6 Serve warm as a side or dessert.
