Chicken Tinaktak

Chicken in Coconut and Tomato

Ground chicken simmered with tomatoes, coconut milk, and green beans. A Chamorro comfort dish.

Ingredients

  • 500g ground chicken
  • 1 cup coconut milk
  • 2 tomatoes, diced
  • 1 cup green beans, cut
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp vegetable oil
  • Salt and pepper

Instructions

  1. 1 Heat oil and saute onion and garlic until soft.
  2. 2 Add ground chicken and cook until browned.
  3. 3 Add diced tomatoes and cook 3 minutes.
  4. 4 Pour in coconut milk and add green beans.
  5. 5 Simmer 15 minutes until beans are tender.
  6. 6 Season with salt and pepper. Serve over rice.
