The Story Behind Chicken Tinaktak
Tinaktak is a beloved Chamorro dish that exemplifies the fusion of indigenous and colonial influences in Micronesian cooking. The combination of coconut milk with tomatoes reflects the meeting of Pacific and Spanish culinary traditions.
Originally made with whatever meat or fish was available, the ground meat version became standard as processed foods arrived.
Tinaktak remains a weekly staple in Chamorro households.
