Ingredients
200g fresh grated coconut
3 green chillies
Juice of 2 limes
1 small onion, roughly chopped
Fresh coriander leaves, a handful
1 clove garlic
Salt to taste
1 tbsp water if needed
Instructions
1Combine grated coconut, chillies, onion, garlic, and coriander in a mortar or food processor.
2Pound or blend to a coarse paste, adding lime juice and salt as you go.
3Add a splash of water if needed to reach a thick but spoonable consistency.
4Taste and adjust the balance of lime, salt, and chilli to your preference.
5Serve immediately as a fresh condiment or refrigerate for up to two days.
