Delicate shaved hearts of palm dressed with lime vinaigrette, fresh herbs, and chilli, a refreshing luxury salad unique to Mauritius.

Ingredients

  • 400g fresh heart of palm, thinly sliced
  • 1 small onion, thinly sliced
  • 2 tomatoes, diced
  • Fresh coriander, chopped
  • Juice of 3 limes
  • 3 tbsp olive oil
  • 2 green chillies, finely sliced
  • Salt and black pepper to taste

Instructions

  1. 1 Slice heart of palm into thin rounds or shave with a mandoline for delicate ribbons.
  2. 2 Combine with sliced onion, diced tomatoes, chillies, and fresh coriander in a bowl.
  3. 3 Whisk together lime juice, olive oil, salt, and pepper to make the vinaigrette.
  4. 4 Dress the salad and toss gently to avoid breaking the delicate palm pieces.
  5. 5 Let rest for five minutes to allow flavours to meld, then serve as a fresh starter.
