Beef sausages simmered in a fragrant Creole tomato sauce with thyme, garlic, ginger, and chili, served over fluffy white rice.

Ingredients

  • 6 beef sausages, sliced diagonally
  • 4 ripe tomatoes, chopped
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 thumb ginger, grated
  • 2 sprigs fresh thyme
  • 2 green chillies, slit
  • 2 tbsp vegetable oil
  • Salt and black pepper
  • 250ml water

Instructions

  1. 1 Heat oil in a heavy saucepan and brown the beef sausage slices on all sides until golden, about four minutes.
  2. 2 Add onion, garlic, and ginger, cooking until softened and fragrant, about three minutes.
  3. 3 Add chopped tomatoes, thyme, chillies, salt, pepper, and water. Stir well to combine.
  4. 4 Simmer uncovered on low heat for twenty minutes until sauce thickens and sausages are cooked through.
  5. 5 Adjust seasoning and serve hot over steamed white rice.
