Ingredients

  • 6 ripe bananas, peeled and halved lengthwise
  • 400ml coconut milk
  • 100g sugar
  • 1 tsp vanilla extract
  • 1 cinnamon stick
  • 1 tsp ground nutmeg
  • Pinch of salt

Instructions

  1. 1 Combine coconut milk, sugar, vanilla, cinnamon stick, nutmeg, and salt in a saucepan over medium heat.
  2. 2 Stir until sugar dissolves and the mixture begins to simmer gently.
  3. 3 Add banana halves carefully, arranging them in a single layer in the pot.
  4. 4 Simmer gently for fifteen minutes, turning bananas once, until they are soft but still hold their shape.
  5. 5 Remove cinnamon stick and serve warm in bowls, spooning the sweetened coconut milk over the bananas.
