500g fresh sashimi-grade reef fish (parrotfish or snapper)

4 limes, juiced

100ml coconut cream

1 small red onion, thinly sliced

1 fresh chili, minced

1 cucumber, diced

Cut fish into 2cm cubes, ensuring all bones are removed.

Toss fish cubes with lime juice and let sit for 5 minutes to lightly cure the surface.
