Coconut Breadfruit Pudding

A dense, sweet pudding of mashed ripe breadfruit blended with coconut cream and sugar, steamed in banana leaves until set and aromatic.

Ingredients

  • 2 large ripe breadfruit
  • 300ml coconut cream
  • 100g sugar
  • 1 tsp vanilla extract
  • Banana leaves for wrapping
  • Pinch of salt

Instructions

  1. 1 Peel ripe breadfruit, remove core, and cut into chunks.
  2. 2 Boil breadfruit until very soft, about 15-20 minutes. Drain and mash until smooth.
  3. 3 Mix mashed breadfruit with coconut cream, sugar, vanilla, and salt.
  4. 4 Soften banana leaves over an open flame until pliable.
  5. 5 Spoon generous portions of the mixture onto banana leaves and wrap into parcels.
  6. 6 Steam parcels for 30 minutes until set. Serve warm or at room temperature.
