Banana Coconut Cake

A moist, dense cake made with ripe Marshallese bananas and freshly grated coconut, baked until golden with a caramelized coconut top.

Ingredients

  • 4 ripe bananas, mashed
  • 200g flour
  • 150g sugar
  • 100g freshly grated coconut
  • 2 eggs
  • 100ml coconut milk
  • 60ml coconut oil, melted
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. 1 Preheat oven to 175°C (350°F). Grease a baking pan with coconut oil.
  2. 2 Mash bananas in a large bowl until smooth.
  3. 3 Mix in eggs, coconut oil, coconut milk, sugar, and vanilla.
  4. 4 Fold in flour, baking powder, and salt until just combined.
  5. 5 Stir in half the grated coconut. Pour batter into the prepared pan.
  6. 6 Top with remaining grated coconut and bake 35-40 minutes until golden and a skewer comes out clean.
