800g ground beef (coarse grind)

200g beef fat

4 cloves garlic, minced

2 tbsp coriander seeds, crushed

1 tbsp black peppercorns, crushed

1 tsp sea salt

Fresh parsley, chopped

Natural beef casings

Splash of red wine vinegar
Instructions

Mix ground beef and beef fat with garlic, crushed coriander, pepper, salt, parsley, and vinegar.

Knead the mixture well to distribute seasonings evenly.

Stuff into natural beef casings, twisting into links about 12cm long.

Refrigerate for at least 4 hours or overnight to let flavors develop.

Grill over medium heat or pan-fry for 10-12 min, turning regularly, until cooked through and caramelized.

Serve with crusty bread, mustard, and a fresh salad.
