Maltese Beef Sausage

Spiced Maltese beef sausages seasoned with coriander seeds, black pepper, garlic, and parsley, grilled or pan-fried until caramelized.

Ingredients

  • 800g ground beef (coarse grind)
  • 200g beef fat
  • 4 cloves garlic, minced
  • 2 tbsp coriander seeds, crushed
  • 1 tbsp black peppercorns, crushed
  • 1 tsp sea salt
  • Fresh parsley, chopped
  • Natural beef casings
  • Splash of red wine vinegar

Instructions

  1. 1 Mix ground beef and beef fat with garlic, crushed coriander, pepper, salt, parsley, and vinegar.
  2. 2 Knead the mixture well to distribute seasonings evenly.
  3. 3 Stuff into natural beef casings, twisting into links about 12cm long.
  4. 4 Refrigerate for at least 4 hours or overnight to let flavors develop.
  5. 5 Grill over medium heat or pan-fry for 10-12 min, turning regularly, until cooked through and caramelized.
  6. 6 Serve with crusty bread, mustard, and a fresh salad.
